I was employed by a UK company for 6 months (APR 2008 - OCT 2008) but worked for them in Mexico, I paid tax and NI in the UK, after my contract finished I went back to Mexico to live and worked for a Mexican company and paid Tax and NI in Mexico. Am I entitled to reclaim all the UK tax I paid?

It would depend on where you were classified as being resident for tax purposes.
If you paid tax and NI in the UK, you would be able to make a claim for a tax refund when you left the UK to live in Mexico.
